Ingredients
3 eggs
150 g caster sugar
150 g butter, softened
1 tsp cinnamon powder
150 g self-rising flour
1/2 apple peeled, cored and sliced
1/2 apple peeled, cored and cubed
For the syrup
85 g light brown sugar
25 g butter
Instructions
1. Preheat the oven to 160 C / 320 F. Grease and line a 20 cm cake tin.
2. Melt the butter in a small saucepan over medium heat. Stir in the light brown sugar. Cook until slightly thickened, 2 minutes. Remove from heat and pour into the lined tin. Layer the sliced apples on top. Set aside.
3. In a large bowl, using a hand mixer, beat together butter and sugar until creamy. Add eggs one at a time. Add the flour and cinnamon powder, stir until just combined. Add the cubed apples and stir until incorporated.
4. Pour batter over apples and bake until a toothpick inserted into the middle comes out clean, about 1 hour. Let cool in pan for about 15 minutes then invert onto a cooling rack and let cool completely before slicing.
