How to Harvest Cabbage (experiment) and Asian Cabbage Roll Recipe with Lemongrass

Let's head out to the garden for a harvest "experiment" on a BEAUTIFUL head of Chinese / Napa cabbage. For this cabbage roll recipe, I am also using fresh scallions and cilantro from the garden, along with chilies, lemongrass, and Kaffir limes I froze from the fall harvest. Asian Inspired Cabbage Rolls Recipe
Serve with Rice

12 Large Napa Cabbage Leaves (or other larges garden green
leaves like swiss chard)
1 Large Scallion
About 1/2 Cup Cilantro Leaves
4 Tbsp Curry *Paste
2 lbs Ground Pork
1 Small Shallot
1/2 Cup Cooked Rice
1 Egg, Beaten
1 Can (around 14 oz )Coconut Milk
1 Tbsp Fish Sauce or Soy Sauce or Good Pinch of Salt
2 Stalks of Lemongrass, Smashed or Split
1 Lime
Splash of Water
Extra Leaves of Cilantro and Green Parts of Scallion for Serving

*or make your own paste by combining some of the following flavors (add more of less of each to your taste), enough to equal 4 to 5 tablespoons:
Fresh Grated Ginger
Fresh Grated Tumeric
Fresh Garlic
Thai Hot Chilies
Shallot
Ground Cumin
Salt
White Pepper
Lime Zest
