White Bread Cod Pudding - Bonita's Kitchen

Today we will be making White Bread Cod Pudding, made with stale bread and fresh atlantic cod. See recipe below!

Ingredients:

1 Custard ingredients:

1 & 1/2 cups whole evaporated milk 
1/8 tsp sea salt
1/2 tsp nutmeg

2 Custard Ingredients: 

3 Large eggs
1 tbsp brown sugar

8 slices of stale bread or more if needed
Butter for bread


4 - 6 pieces of boneless cod fillets, boneless 
1/2 tsp sea salt
 1/2 small onion
1 tsp white pepper

Method:

•      Let milk and salt, nutmeg simmer in a small saucepan on stove top for 5 minutes. Then remove from   heat and let go to room temp.
◦    Whisk together eggs and brown sugar in a small bowl.
◦    Then whisk together with steamed milk mixture until all combined, seat aside until ready to use.
▪ Butter one side of the stale bread and seat aside until ready to use.
▪ In a small saucepan add water and bring to a boil then add salt and cod, cook for only 3 minutes then remove from water into a bowl then flake apart.
▪ Place on a plate to layer with the other ingredients. 
•                        Pudding Bowl or Bread Pan 
◦ Butter pudding bowl or pan of choice and start to layer bread butter down, then a layer of cod, another layer of buttered bread and make sure there is no holes around the sides if so add more bread.
◦ Then pour a layer on the custard you made just until it coats the top of bread.
◦ Continue layering the bread, cod, and last layer to be butter up bread then pour the custard over top. 
•  Bake in a 350º oven covered for 40-60 minutes or until golden brown, Line pan with parchment paper, when baked remove from heat and run knife around sides before flipping unto a plate, then let seat for 5 minutes and slowly release from bowl. Serve on its own or with a white drawn batter, see recipe below.
( If you have a cast iron pot put the pudding inside with a grate at the bottom so pudding don't burn ) 

 DRAWN BUTTER: 

Ingredients:1/4 cup butter2 tbsp flour or cornstarch1 medium onion, choppedsalt and pepper to taste1 1/2 to 2 cups hot water, more to thin out sauce if needed.

 Method: 

Melt butter in a frying pan on a medium to low heat, then add chopped onions fry until soft.Add flour or cornstarch, whisk around to blend together, then add salt and pepper and hot water.Continue stirring until thickened and add more hot water if needed.
