Veggie Fritters I Potato Balls
Ingredients
3 pieces medium size Potatoes
1 pieces medium size Carrots, grated
1 Bunch Spring Onions, chopped
4 Tbsp Cornstarch
1 Tbsp Flour
1 Tsp Salt
1/2 Tsp Ground Black Pepper
1 1/2 tsp Cooking Oil
Cooking oil for frying

Procedure
1. In a pot with water boil potatoes until tender. Then mash boiled potatoes with fork or a masher.
2. In a bowl combine mash potatoes, grated carrots, spring onions, cornstarch, flour, cooking oil, salt and ground black pepper. Mix well.
3. Scoop a teaspoon of the mixture and shape into a ball. Repeat process until you finish all the mixture.
4. Heat oil in a pan and fry potato balls until golden brown. Serve with catsup as dippings sauce or eat it as it is.

Yields: 35 pieces potato fritters
