Today in this long version video, we are Cooking a Chorizo Mushroom Risotto. We start off in the frying pan then transfer it to the pressure cooker.

Ingredients:

1 onion
3 cloves garlic
about 400 grams diced chorizo
about 400 grams sliced mushrooms
3 cups chicken stock
1/2 cup white wine
1 and a 1/2 cups arborio rice
1/2 to 1 cup chives / parsley / or spinach (use more spinach)
1/2 to 1 cup parmesan cheese
Pepper to taste

* the chorizo, stock, and cheese can be salty so do not add any extra salt to this dish!
