Secret to Perfect Pancakes

I promise you this, if you do everything the way I did it, you make a great batter (I use Bisquick because I think it's top notch) mix it right, you have a griddle because griddles give you the easiest best appearance, and you cook it just enough, you will have some of the best pancakes you will ever eat.

If you don't have Bisquick and you don't have an electric griddle, you can at least do the most important step of cooking it just enough. If you are unsure what temp your griddle is, follow the times I give because that achieves the perfect doneness and color (keep batter viscosity in mind, however)

*Because I start my timer a little bit after I put the pancakes on, it translates to about 65 seconds flip, and then 1 minute (it's easier to hit the timer when you're only flipping).

Oh and if you want to make your own Bisquick mix, you need four things. I spent a Summer in Germany and didn't have any, so I had to make it with scratch ingredients. They really don't have vegetable shortening over there, so I used vegetable margarine instead and it worked great.

2 cups of all purpose flour
2 or 3 tsp baking powder
1 tsp of salt
1 tbsp of butter, margarine, shortening, or oil

Mix and cut in the butter or whatever fat you have with a fork or pastry cutter
Use as you would Bisquick Mix
