3-4 red potatoes (any colour will work)
5-7 carrots
2 cups frozen peas
1 cup diced gherkin
2 cups shredded/sliced chicken
3-4 eggs
Dressing
2.5 cups mayonnaise
pinch salt
black pepper
1/4 cup lime juice
1/2 tbsp dijon mustard
