Making Pastizzi! Step by Step

I grew up on Pastizzi, and have been wanting them forever, but they are not easy to come by in the south. So I decided to make my own. Once I mentioned I was doing this to my friends and family, they all requested that I share the recipe. So here you go, and enjoy!
ngredients
5 Cups Flour
1 Tbsp Salt
2 Cups of COLD water
¼ Oil
1 Cup Shortening
¼ Butter
Instructions
In a large mixing bowl combine all ingredients.
Continue to knead the dough until it comes together completely and is no longer sticky.
Once dough is no longer sticky, form into a ball and spread a thin layer of shortening on the ball.
Wrap in Plastic Wrap and refrigerate for 2 hours.
After 2 hours, remove ball from fridge and roll and stretch the dough until it paper thin. (see video below)
Slather remaining shortening and butter onto the surface of the dough.
Starting at one end of dough, start to roll the dough into a log, pulling and stretching the dough as you roll.
Roll the log into a "snail" roll and cover with plastic wrap. Refrigerate for another hour.
After an hour, remove the dough and cut into Walnut size pieces.
Press out pieces so they are flat.
Fill with your choice of fillings.
Bake at 425 degrees for 30-40 minutes or until golden brown.
