Fried Cabbage, Bacon and Onion side dish (Dr Poon / Low Carb)

This is a simple and delicious low-carb side dish that can be made Dr Poon friendly if you use a low-sodium bacon. Some people following Paleo or Primal diets do have bacon and others don't, so depending on your particular plan it may or may not be suitable. I can tell you it's delicious and it makes a great side dish for the Kalua Pig recipe I shared earlier.

INGREDIENTS:
3-4 pieces of American / streaky bacon, chopped
1 pound (500g) cabbage, coarsely chopped (about 1 small head)
1 small onion, coarsely chopped (about 2-1/2 ounces)
salt and pepper to taste

METHOD:
In a large skillet, fry the bacon until not quite crisp yet. Add the cabbage and onions to the skillet and cook and stir until the cabbage has wilted and lightly browned. You can cover it during this time if you like, to cook faster and keep it moist. (Add a bit of olive oil if you don't have enough bacon grease in the pan.) Season with salt and pepper.
