Today I would like to show you a EASY & SIMPLE PENANG NYONYA STEAMED PORK WITH SALTED FISH.
Normally we would use a better quality salted fish but since it is not available here in GERMANY I am using what I can find in the local Asian shop which is Salted Small Threadfin Fish.
To get a better and super result I recommend that you use RED SNAPPER SALTED FISH, or the PANAU SALTED FISH which is now very expensive and can only be bought in the SALTED SEAFOOD Supply shop in Malaysia.

Info: If you are using Portuguese Dorada Salted Fish, soak the fish meat overnight to remove the extreme saltiness. Then squeeze to remove the salt taste. Remember this Dorada Salted Fish is extremely salty.

Here are the ingredients that you need:-

20gms of ginger strips
2 red chillies cut into rings or strips
1 Spring Onions (scallion) cut into rings
250gms Pork belly meat without the skin
50gms Small Salted Threadfin Fish boneless, wash and dry
50ml Vegetable or Chicken stock
Pepper and a few drops of sesame oil

Additional ginger strips, chilli rings and scallion rings for Toppings

For Tempering
2 to 3 tbsp oil
a few drops of Sesame oil
1 tbsp ginger strips

Wash and clean Pork Belly mea, remove the skin.
Blanch in boiling water for about 5 to remove dirt and any blood left on the meat. Remove from the boiling water and cool the Pork belly meat.

Once the pork Belly is cooled, cut into thin slices and line the pork slices into a steaming plate with a rim of about 2-3 cm high.
Then followed by placing the thin slices of the Salted Fish in between the pork slices.
Top the Pork slices and salted fish ingredients with Scallion Rings, ginger Strips( sorry in video I mentioned garlic, my mistake..its ginger) and chili rings and then our the 50ml Stock over the whole mixture. Sprinkle a little pepper powder and a few drops of sesame oil.

Bring a steaming pot with water to a high or medium boil.
Steam the Pork Belly with Salted Fish for 20-25 minutes longer to your liking but make sure the juice do not dry up and top the boiling water for steaming.

Remove the Pork Belly with Salted Fish and place on the side.
Top with Fresh Aromatics like scallion rings, crispy fried onions and chill rings.

Meantime we will prepare the Tempering. This will improve the taste further.
Heat a pan with 2 - 3 tbsp oil and add a few drops of sesame oil
once oil is warm enough fry enough ginger strips till golden brown.
Pour the freshly fried ginger with oil over the Fresh Aromatics
and serve immediately .

Best eaten warm and serve with Steamed Rice.
