CONFINEMENT FOOD:PENANG NYONYA SESAME OIL FRIED FISH - MUAH EU CHIEN OOI KEOW NGOH HU

Today I would like to show you this special dish from PENANG, MALAYSIA NYONYA CONFINEMENT FOOD. You can also cook it as a FISH DISH for your normal daily meals.Since the coming New Year will be the year of the PIG which brings good signs for the Chinese horoscope, I want to show you new mothers, one of my mothers CONFINEMENT RECIPE. This dish is call MUAH EU CHIEN OOI KEOW NGOH HU which means FRIED FISH IN SESAME OIL.
FOR CONFINEMENT MOTHERS: IT IS SUITABLE FOR CONSUMPTION AFTER 14TH DAY OF BIRTH, otherwise you can eat it as normal dish for normal Person.
So enjoy cooking it…..and enjoy this YUMMY FISH DISH!!!
You will need following Ingredients:
3 slices Turmeric*
1 Scallion in stripes
1 tsp Ginger stripes
1 tsp Sesame Oil
250gm Fish Fillet with skin- THREADFIN/NGOH HU (clean the scales off the skin)
1 tbsp cornstarch
100ml Sesame Oil ( it depends on the size of your fish parts)
60gm old ginger cut into strips
3 slices of turmeric*
2 cloves of garlic chopped
1 scallion white part cut into fine pieces
1 tbsp preserved soya beans ( light brown color sort called Tau Cheo,washed and drain to get the beans, then mash it)
150ml Water or fish stock
1 tsp freshly pounded red chili paste (chili deseeded)
1 tsp sugar
1/4 tsp grounded black pepper
Thickening: 1 tsp cornstarch mix with 2 tbsp water
Garnish with coriander leaves and red chili strips
*TURMERIC- DONT OVER USE TURMERIC.
It is bitter and too much will spoilt the dish and it spoilt the purpose of prevention and instead cause a upset digestive system.
Clean and descale the fish. Then Cut into pieces or fillet the fish.
The skin intact with the meat. Marinate the 250gm fish fillet with 3 slices of turmeric, or a bit more if you like, 1 scallion stripes, 1 tbsp ginger, a little salt and 1 tsp Sesame Oil. Using your hands crush the turmeric, ginger, scallion and mix into the fish to cover fish well.
Marinate for 10 minutes.
Heat the wok with 100ml Sesame Oil at medium heat.Do not over heat your oil. Do a chopstick test. When you dip the chopsticks into oil and it bubbles a little oil is ready for fry.
Remove the marinate mixture from the fish and coat the fish with a bit of cornstarch, to prevent oil from spattering all over the kitchen like it is shown in the video. Fry skin down first and then turn, fry till golden brown. Remove from oil and place over a kitchen paper to drain.
Remove oil from wok, leaving about 1 to 2 tbsp sesame oil or use fresh sesame oil, fry the chopped 2 cloves garlic, 60gm ginger strips, 3 slices of turmeric till aromatic then and add 150ml water and bring to boil for about 1-2 minutes. Scoop out with a coarse sieve the gingers and turmeric, leave the sauce in the wok and add 1 tsp chili paste and 1 tbsp light soya bean paste(tau cheo), cook to blend ingredient and add sugar and pepper to taste. Add thickening/slurry that is the cornstarch mixture to thicken sauce.
Finally add the fried fish stir to coat. Ready.
Scoop on to serving plate and garnish with coriander and chili strips.
Serve with spiced rice (video coming soon, special rice for Confinement and others!)
