What's for Dinner? Shipwreck Casserole
An old favourite recipe.

***Shipwreck Casserole***
Ingredients:
2 large onions
2 medium potatoes
1 lb ground beef (500 g)
1/2 cup long grain rice
1/3 cup green pepper
condensed tomato soup (10oz)
soup can of boiling water
pepper (and salt if desired)
Peel onion and slice over bottom of 2 quart (2.5 L) casserole dish. Sprinkle with pepper. Slice peeled potatoes over onions. Sprinkle pepper over potatoes. Pat ground beef over potatoes. Sprinkle with pepper. Sprinkle rice on next, followed by chopped green pepper (can substitute celery or something else if desired).
Mix soup and water together. Pour over top.
Bake for 350 degrees F (180 degrees C) for 2 hours until vegetables are tender.
Serves 4
