The BEST Baked Haddock -Easy

EASY Baked Haddock! This recipe uses Mayonnaise, but you won't even know it! My Wife doesn't like Mayo, but this is one of her favorite meals!

You will need:

1-2 Haddock Fillets
1/2 Onion
About 1/8 Cup Mayonnaise
1 Lemon (1/2 to cook and 1/2 for Garnish)
1/2 Cup Bread Crumbs
1/2 TSP Kosher Salt
1/4 TSP Black Pepper
1/2 Stick of Butter

Pre-Heat Oven to 375 Degrees. Lay out Fillets and spread a thin layer of mayo onto the inner side and a thin layer of bread crumbs over that. Roll the fillets tightly from the larger ends to their tapered thinner end and place into a baking dish.
Rough cut the 1/2 onion into 1/4's and break apart onto dish. Cut 1/2 Stick of Butter into 4-5 pieces and place all around in the baking dish. Sprinkle Salt and Pepper over the Fillets and squeeze the 1/2 Lemon over the dish as well. I usually cut that same lemon half up and place in the dish.
Cover tightly with Aluminum Foil and bake at 375 Degrees for about 25-30 minutes (Depending on the size of your Fillets. I used some pretty large Fillets, so they needed 30 minutes). Then, remove the foil and set your oven to BROIL for about 8-10 minutes to brown the top of the Bread Crumbs (Keep an eye on it so you don't blacken the top...unless you like that).
I will usually tilt the dish and spoon some of the butter in the bottom of the dish back over the fish! Delicious!
I sliced the other 1/2 of the Lemon thinly for Garnish and served with Parmesan Couscous and Garlic Butter Toast.
