My Italian Grandmother's Marinara Sauce
I miss my grandmother, Nana Rita, for a lot of reasons. Too many to count on one finger.
Thankfully, when she passed, she left me with a heart full of memories. But what she couldn't give me was access to her incredible cooking. She had the magic touch, and though she left me with a lot of recipes, they haven't turned out quite the same. They are good, but that extra something special was missing: her pazazz.
Which is why I'm so thrilled to report that after years of testing and tasting, I have finally come up with the closest possible magic that was her marinara sauce. With a little help from my mother and my Aunt, I have come soooo close to replicating my Nana Rita's sauce. And now, you get to experience it too.
Here is what you need:
2-3 tbsp EVOO
1 medium onion, small dice
5 cloves garlic, minced
2 28oz cans of diced tomatoes
1 or 2 15oz cans of tomato sauce (if you only have one on hand, that will do)
1/3 cup tomato paste
1 cup veggie stock
1 tsp dried oregano
2 tsp sea salt
1 tsp black pepper
1 apple, quartered
1. Heat oil over medium low heat. Add onion and saute until translucent, about 10 minutes. Add in the garlic and saute another 30-60 seconds.
2. Add tomatoes, tomato sauce, spices, stock, tomato paste and apple. Simmer the sauce on low heat for at least an hour (and all day if you have the time to spare!).
3. Serve over your favorite pasta, use in an eggplant parmesan, or just eat it with a wooden spoon :)
