    Place all the ingredients into a heavy pan and simmer over a gentle heat for around 40 minutes, or until the mixture has thickened. Stir occasionally so that the sugar doesn’t catch at the bottom of the pan.

    For this step you'll need:

    • 3 Mango peeled and chopped into 1in cubes
    • 1 tbsp Apple vinegar
    • 50g Unrefined light muscovado sugar
    • ½tsp Salt
    • 1 Garlic clove(s) grated
    • 1½tsp Ginger peeled and grated
    • 1tsp Paprika
    • 1 Birds eye chilli red
    • 1 Lime(s) freshly squeezed

    Allow to cool and place into sterilised jam jars or airtight glass container.
