    Preheat oven to 190°C (170°C fan, 375°F, gas mark 5)

    Heat oil in a frying pan over medium heat, and fry onions for 10 minutes until brown, stirring occasionally. Stir in pepper and garlic cook for 1 minute.

    For this step you'll need:

    • ½ Onion(s) chopped finely, a cup of
    • ¼tsp Pepper fresh, ground
    • 1 tbsp Garlic clove(s) minced

    Combine flour, sugar, baking powder, and salt in to large bowl. Using a whisk; make a well in center, add onion mixture, cheese and beer to flour mixture, stirring just until moist.

    For this step you'll need:

    • 450g Strong white bread flour
    • 3 tbsp Unrefined dark muscovado sugar
    • 2tsp Baking powder
    • 115g Monterey jack cheese grated
    • 350ml Beer

    Spoon the mix into a well greased loaf pan and drizzle 1 tbsp of melted butter over the top.

    For this step you'll need:

    • 1 tbsp Butter (unsalted) melted

    Bake for 35 minutes. Drizzle the remaining butter over the loaf and bake for an additional 25 minutes or until golden brown and a toothpick comes out clean when inserted in the centre. Let the loaf cool for 5 minutes then turn out of the pan and on to a cooling rack.

    • 1 tbsp Butter (unsalted) melted
