Cucumber, Onion and Tomato Salad! (Fresh from the Garden)
3 cucumbers peeled... leaving strips of green.
Cut off the ends and slice about a 1/4 inch thick and place
them in a bowl big enough to mix everything up.
Then add...
1 whole sweet Vidalia onion sliced thin...cut in half.
Sliced cherry tomatoes (about 1 & 1/2 cups)
1/2 cup of cold water
1/2 cup apple cider vinegar
1/4 cup extra virgin olive oil
1 tsp. salt
1 tsp. black pepper
2 to 4 tbsp. sugar (depending on how sweet you like it!)
1 heaping tbsp. finely chopped dill.
Mix everything well and chill for 2 to 4 hours, mixing it in the refrigerator every hour or so to get everything on everything!
