Edible Cookie Dough for One
Ingredients:
3 tablespoons flour
1 tablespoon sugar
1 heaping tablespoon brown sugar
1-1 1/2 tablespoon(s) salted butter softened
1/8 teaspoon vanilla extract
1-2 tablespoon(s) Chocolate chips
Steps:
1. Place flour in mug and microwave for 30-45 seconds to pasteurize it. To check, ensure the temperature of the flour has reached 160 F.
2. Combine sugar, brown sugar, softened butter, chocolate chips, water, vanilla extract, salt and flour in a mug and mix well.
Pesto Pizza Pitas
Ingredients:
4 small pitas
Jarred Pesto
Bocconcini balls
Sweet roasted red peppers, jarred
Red onion, thinly sliced
Steps:
1. Place the pitas on a baking sheet and generously spread with pesto. Top with remaining ingredients and microwave or broil until the cheese is melted.
BBQ Chicken Quesadilla
Ingredients:
1 roasted chicken
1 bottle of BBQ Sauce
Red onion, chopped
Red Pepper, chopped
Cheddar, grated
Green onion, chopped
Whole wheat tortillas
Optional: Sour cream for dipping
Steps:
1. Assemble all the ingredients onto one half of a tortilla and place in the microwave or sear in a hot pan with a little bit of oil. Repeat on second side until crispy. Cut and serve.
