Ingredients:
Basmati rice / Raw rice / Idli rice – 1 glass (I used basmati rice)
Corn kernels
Beans
Cauliflower
Carrots
Tindora / Ivy gourd
Cabbage
Brinjal
Potato
Capsicum
Onion
Green chilly
Garlic – 3 fat cloves
Ginger – 1 small piece
Egg – 2 (Optional)
Coriander leaves
Soya sauce – 2 tbsp
Crushed red chilly / Chilly flakes - 1½ tbsp
Pepper powder
Salt
Oil

Steps:
Chop all vegetables finely.

Add salt to 1½ glass water.
Add rice.
Cover and bring it to a boil.
Cover and cook on low flame.
It took me 14 minutes.
Transfer it to a plate and let it cool.

Heat oil in a pan.
Add ginger and garlic.
Once it turns golden, add all vegetables except capsicum.
Add crushed red chilly.
Add salt.
Cook stirring on high flame for 5 minutes.
Add pepper powder.
Add capsicum. Mix well.
Add cooked and cooled rice.
Add soya sauce and mix well.
Switch off.

Heat oil in a pan and scramble the eggs.
Add this to the rice.
Garnish with coriander leaves.
You may also scramble the eggs along with vegetables.
Enjoy the mixed fried rice.
