Episode #8 - Homemade Tomato Sauce with Special Guest Melissa Ciancio

In Episode #8 we are in Castropignano, Italy and it is September! September is the month when the Italian ladies make their 1 year supply of Homemade Tomato Sauce.  Italians like to make their own pasta sauce because the ones you buy at the store are not organic, contain lots of acid and preservatives. Doing it this way, the Italians control what's in the sauce, how it's made, where the tomatoes come from, plus it tastes a lot better when you make it yourself.

Ingredients needed:
1) ROMAN TOMATOES - 4 bushels (or 200 lbs/100 kg) of fresh
picked organic ripe "roman tomatoes".
2) WHITE ONIONS - 1 or 2 Onions (sliced)
3) BASIL - Lots of fresh Basil leaves
4) Salt -

Basic Equipment:
1) Extra Large Pot
2) Gas Burner
3) Gas tank
4) Tomato Grinder
5) Plastic bins
6) Bottles or Jars (with lids)
7) Bottle Sealer (only if you use bottles instead of jars)

- Wash all tomatoes before beginning.
- Cut tomatoes (be sure it looks and smells good)
- Cook in pot for 1 hour or when the tomatoes are done.
- Pass thru the tomato grinder machine
- Pour in bottles
- Place all the bottles in pot. Cover with water. Boil them for 1 hour.
