2823 Chef R.J. Ryan's Chocolate Buddino (Pudding)
R.J.’s Chocolate Budino Yields: 9x 5oz portions
3/4Qt Milk
1.5 C Heavy Cream
90g Cocoa Powder
225g Sugar
30g Corn Starch
92g water
108g egg yolks (6 XL yolks)
1 Tbs Vanilla
180g Dark Chocolate, finely chopped
squirt of EVOO
sea salt to taste in each glass
whipped cream to top
Bring water to boil
Combine milk and cream in a pot, warm
In another pot, place sugar and cornstarch. Sift in cocoa powder
Add boiling water, whisk together to form thick paste
Whisk in yolks, one at a time
Add cream in 3 separate additions, then vanilla
On medium, whisk mixture until thick (like mayo)
Remove from heat and whisk in chocolate
pour into glass jars, cover and refrigerate
Add sea salt, EVOO and dollop of whipped cream
