No Bake Yema Sponge Cake | How to Make Yema Sponge Cake Without Oven
No Bake Yema Sponge Cake
Ingredients
1 1/2 cup All-Purpose Flour
1 Tsp Baking Powder
Pinch of salt
6 eggs (Room Temperature)
1 cup Sugar
YEMA FROSTING
1 Big Can (370ml) Evaporated Milk
1 Big Can (300ml) Condensed Milk
3 Egg Yolks
1 Tbsp Vanilla
1 Tbsp Cornstarch
3/4 cup Grated Cheese, toppings
Procedure
1. Grease Llanera or mold with cooking oil(vegetable oil, corn oil or canola oil). Don't grease the sides of the mold so the cake will have something to hold onto as it rises. Set aside.
2. In a bowl sift together flour, baking powder and a pinch of salt. Mix and set aside.
3. In another bowl beat 6 eggs over high speed for 1 minute. Then gradually add sugar while continously beating for 8-10 minutes or until fluffy and thick.
4. Gradually add dry ingredients into the mixture. Fold in the dry ingredients until justcombined or there's no trace of flour left. Don't over mix.
5. Pour cake batter about half of the mold. Tap to get rid of bubbles. Cover each mold with aluminom foil.
6. Transfer mold into the steamer. Steam for 30 minutes over low heat or until toothpick inserted comes out clean. Remove foil from the mold and let it cool.
7. YEMA FROSTING. In a pan combine evaporated milk, condensed milk, egg yolk and vanilla. Mix. Add cornstarch. Mix well. Turn on stove and stir over low heat until the mixture is thick. Turn off the heat and let it cool.
8. Run knife around the edges of the mold and flip sponge cake in a plate. Spread yema frosting evenly on the sponge cake. Top with grated cheese.
