You don't have to stick to cherries, you can use any fruit pie filling you like. You can also split the dough and make two smaller pans, so you can have different pie fillings on each.
Cherry Bars Recipe
Bars:
1 1/2 cup butter softened
3 cups granulated sugar
1 1/2 tsp salt
1 1/2 tsp vanilla extract
1 1/2 tsp almond extract
5 1/2 cups all purpose flour
1 12 tsp baking powder
2 cans (21 ounces) cherry pie filling (other fruit pie fillings work too)
Glaze:
1 cups icing sugar
3 tbsp milk

Preheat over to 350 and spray a 13x9 inch pan with vegetable spray
Cream together butter & sugar. Add salt, eggs, vanilla & almond and continue mixing until fully incorporated.
Add baking powder to the flour and stir. Add flour mixture a little at a time to the wet mixture.
Reserve about 2 cups mixture for topping.
Spread remaining mixture in pan and press down. Spread pie filling on top and then take pieces of reserved mixture and lay on top of pie filling.
Bake 50-60 minutes or until golden brown. Remove from oven and cool completely on wire rack.

Once cool mix powdered (icing) sugar and milk together and drizzle over cooled bars.

Let glaze set and enjoy!!
