How to make Chorizo Sausages

Here in Southern California the stores sell chorizo as a spiced meat paste packaged in plastic. I saw an old BBC Two Fat Ladies episode in which Clarissa Dickson Wright used chorizo sausages. After doing a lot of research I found some recipes I could use to come up with my own way of making these sausages at home. And some people tell me my videos have a natural ASMR quality.
