Carrot Cake - Raw, No Sugar, No Flour
Ingredients for the cake:
• 1 pound (440 gr) carrots, grated and squeezed to remove extra liquid
• ½ cup almonds , soaked for 4-8 hours
• 2 cups dried pineapple, chopped small
• 1 cup shredded coconut, unsweetened
• 1 cup ground oat flakes
• 1 cup pitted dates
• ½ tsp salt
• 1 tsp cinnamon
• ½ tsp nutmeg
• 1/8 tsp cardamom (optional)
• 1/3 coconut oil

• 1 cup cashews, soaked for 4-8 hours
• ¼ coconut oil
• ¼ cup maple syrup
• juice of 1 lemon
• 1 tsp vanilla extract
