Ingredients:
- 5 Medium Potatoes (Boiled)
- 2 Tbsp Butter
- 2 to 3 Eggs
- 1 Cup All-Purpose Flour
- 2 Cups Breadcrumbs
- 2 Tbsp Parmesan Cheese
- Salt and Pepper as per your taste
- Oil for frying
- 2 Chopped Green Chillies
- 1/2 Tsp. Chilli Flakes
- Cheese cubes
- 2 Tbsp Parsley
- 1 ½ Tbsp Spring Onions
- 3 Tbsp coriander
Instructions:
Step 1:
In a bowl, add Mash potatoes, Butter, Parmesan Cheese, Green Chilies, Chili flakes, Parsley, Coriander, Spring Onions and add to the potato along with salt and pepper. Mix well.
Step 2:
You can roll them to give them oval shapes. Cover and refrigerate for 30 minutes.
Step 3:
Roll croquettes into flour first, then egg, then breadcrumbs. Do the ends too for an even crumb. (Refrigerate while the oil is heating up)
Step 4:
Heat up the oil and gently place the croquettes into the oil. Do it in 3-4 batches depending on the size of your fryer. Keep stirring them so they don’t burn on the bottom. They will be ready when golden brown. Place on absorbent paper then serve immediately. Your cheese potato croquettes are ready to serve.
