YES! We did it. Vegan nachos, vegan cheese, and vegan “meat” crumble. All made from scratch. All good. All yummy. All plant-based. Thank you Mexico for inspiring us to make this, we had an amazing time visiting!

Vegan Crumble Ingredients:
1 Pack Firm Tofu
250g Orinji Mushrooms
200g Red Onions
1 Can Beans or 250g Boiled Beans
1 Cup Oats
Red Chili (you pick the amount)
Tortillas
Your favorite corn chips
2T Soy Sauce
2t Black Soy Sauce

Ready?
1.Slice the firm tofu and throw it into a blender. Blend it until it’s a nice mush.
2.Next up mushrooms and red onions, keep that blender going.
3.Finally blend the beans and oats into and blend up.
4.Take all three blended mixtures and mix them together.
5.Get your hands in the mixture, feel it, mix it together.
6.Give it a Thai kick by mixing in the chilis.
7.Grill all that goodness together until it looks like ground beef (if you haven’t seen ground beef in years, then just guess :))
8.Make the vegan cheese according to this recipe
9.Grill up some tortilla shells or use your corn chips, then layer all this goodness in with tomatoes, onions, olives, avocados or whatever tickles your fancy.
10.Serve.
11.Enjoy.
12.Eat.
13.Finish.
14.Go back to step 1 and do it again.
