Ingredients
2 cups sifted all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons cinnamon
1 ¾ cups sugar
1 cup vegetable (corn) oil
3 eggs, beaten
1 teaspoon vanilla
2 cups shredded carrots
1 cup sweetened coconut flakes
1 cup chopped walnuts
1 (8 oz/226g ) crushed pineapple can, completely drained from juice
Coconut and chopped walnut for garnish
