EASY AND SIMPLE AUTHENTIC BIRIYANI *MAURITIAN RECIPE

For the Marinade
2.5kg lamb leg chopped
50g mint chopped
100g coriander chopped
450ml thick Greek yoghurt
10 potatoes *
10 onions sliced and fried
75g garlic ginger mince
3 long green chillies pierced
4/5tbsp cumin seeds freshly toasted and ground
1tsp cinnamon powder
1tsp cardamom powder
5 cloves
100ml vegetable oil
Salt to taste

* the potatoes are medium sized and chopped in half. They have been fried raw in saffron and salt just to give it colour and to stop the potatoes breaking when they cook.

For the rice
1.5kg tilda basmati rice soaked and drained
1 cinnamon stick snapped in half
10 cardamom seeds crushed
10 cloves
Salt to season water
