Pineapple Upside Down Cake: Backpack Baking from Cookies Cupcakes and Cardio

Learn how to make a pineapple upside down cake, while we take you on an backpack baking adventure to Top of the World Provincial Park in the Canadian Rockies.

In case you're wondering, this pineapple upside down cake recipe can be baked in any oven if you feel like staying in the comforts of your home.

Ingredients used in this recipe:
- 2 Tbsp butter or margarine (30g)
- 1/4 cup brown sugar (45g)
- 5 pineapple slices/rings
- 3/4 cup AP flour (90g)
- 1 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup granulated sugar (100g)
- 2 tbsp butter or margarine (30g)
- 1/2 cup milk (any %) (125mL)
- 1 egg

If baking at home, use an 8" cake pan and bake at 350F for 40-45 minutes.
Turn upside down immediately upon removal from oven and all to sit for a couple of minutes before removing pan.
