This rich, golden jam has sweet and fruity taste. You can prepare it totally clear or with a few shards of orange peel hanging about in it.

Cut up mangos or use canned
If using fresh mango I like to cut it up as in my how to cut a mango into a mango hedgehog as in my other video.
I also added an orange. Mash in food processor.
Measure the liquid.
In the big pot put:

1 tablespoon cinnamon, adjust according to your taste.
Bring cut up mangos to boil then process in food processor when they are see-through.
Add back to pot, and add sugar 454 grams or 1 pound of crystal sugar for each 20 ounces or 2 1/2 cups liquid.
to setting point, 8 minutes in this case, but it can vary. See video if not sure.
Some people as pectin or some such, but I don't need to.
Add some of the orange peel before potting.
Have your jars boiling for steralizing and put the Jam in the jars.
