Black Eye Peas Fritters Recipe

Black eyed peas made into fritters is a delicious way to have your peas. This super easy recipe makes a tasty dish to enjoy your pulses and makes a great snack. This is my version of a Brazilian inspired acaraje recipe
Ingredients:
1 ¼ cup /8oz/225g black eyed beans (dried)
1 onion chopped
1 small red scotch bonnet or green chillies to your taste
½ cup/ 4oz/118g/ warm water
1 chicken stock cube dissolved in the warm water
1 teaspoon ground dried shrimps
Oil for frying(sunflower or vegetable oil)
Pinch of salt to taste

Method:
1. Soak black eye beans with a lot of water for 8 hours or overnight. Remove the eye from each bean.
2. Throw away the water in the bowl, top up with fresh cold water. Soak the beans again for 2 hours to make sure to remove all black eyes. The skins will float to the surface. Briskly rub the beans between the palms of your hands to remove all skin.
3. Place the beans in a blender or food processor with the onions, chilli and stock cube dissolved in water. Blend a little at a time to make into a smooth paste.
4. Pour the mixture into a large bowl, add dried shrimp to mix together. Whisk the mixture for a few minutes.
5. Heat oil in a pan on a medium heat, fry spoon full of mixture in batchers, for 3- 4 minutes on each side or until it is golden brown. Use a skewer to test if the inside is cooked. Drain on kitchen paper.

Cooks Tips:
Rinse the beans several times with water to remove all the skin.
Bean mixture can be kept in the fridge for up to 2 days.
