Ok. This is my very first attempt ever at making a Japanese cheesecake. So, I will make lots of mistakes but hopefully, you can learn from me. :) I wanted Japanese fluffy pancakes but it was just too hot to heat up the pan. So, Japanese cheesecake in the rice cooker it is. And by melting the cream cheese and butter in the rice cooker, I didn't heat up my house. Plus one less pot and bowl to clean up. I hope you'll love it as much as I did. Enjoy and Happy baking in your rice cooker!
EASY RICE COOKER CAKE RECIPES: Japanese Cheesecake
INGREDIENTS:
1/3 cup or 60 grams MILK
2 tbsp + 1 tsp or 40 grams BUTTER
5 ounce or 140 grams CREAM CHEESE
1/2 cup or 50 grams ALL PURPOSE FLOUR
2 tbsp or 15 grams CORN STARCH
5 large or 6 small EGGS (yolk & white separated)
1/2 cup or 100 grams SUGAR
HOW TO:
1) Put milk, butter & cream cheese in rice cooker, then turn it on. Close the lid for 1 min, mix then mix. Close again for 30-4 minutes, try not to let it boil (yeah, mine boiled a bit). Remove the pot from the cooker and mix until cream cheese melted and smooth. Make sure to scrap the sides.
2) Add flour and corn starch to cream cheese mixture, then mix well; scrapping the sides
3) Add egg yolks to batter and mix well
4) Put egg white into LARGE mixing bowl (yeah, I started with a small one then had to transfer) and mix with electric mixer until fluffy. Add a bit of sugar as you mix, every minute or so. Mix until creamy and the peak stands up (yeah, mine wasn't). Beat for about 10 minutes.
5) Add about a cup of the egg white into the batter and slowly (UPDATED) fold in with spatula, do not mix with hand whisk. Slowly add more egg whites and slowly fold it until done. It's important to not over mix here.
6) Use spatula to scrape the sides and break up bubbles. Use chopstick to break up more bubbles, going in circular motion. Also slam your pot onto the counter to break up bubbles.
7) Bake for 2 COOK cycles, then check. Remove from heat and let it cool for 30 minutes or so
8) Loosen the sides with a spatula and use your hand to slowly pull the cake off the bottom. Then turn it upside down onto a plate.
