This easy and wonderful recipe is listed below:

In a large bowl add 2.2 lbs. of dried fruit of your choice with some nuts (do not skimp on the fruit or nuts.) To that mixture add 1 cup of brown sugar, light or dark, your choice, along with 2 cups of juice (I used orange juice) Mix together well and let it sit covered on the counter for at least 24 hours. Prepare a 9 inch spring form pan,(or any 9 inch pan with high sides) lining it with parchment paper on bottom and sides. Add 2-1/2 cups SELF RISING flour to the mixture and combine really well...add a little more juice if needed. It should be thick but not dry. Add the mixture to your spring form pan and bake 1 hour 45 minutes in a preheated 300 F oven. Test at 1 hr. 15 minutes. Your testing stick should come out clean. Decorate the top any way you want. Let it sit another day and serve. Enjoy!!!
