Hot Water CornBread Ingredients
2 - cups of Cornmeal ( WHITE , YELLOW , BUTTERMILK - Your Preference )
1 - Teaspoon of SALT
1 - 2 Teaspoons of BAKING SODA
1 - 2 Tablespoons of SUGAR ( Sugar is optional )
1/4 cup of FLOUR
1/2 stick of Butter
1 cup or more as needed of CANOLA OIL ( VEGETABLE OIL , LARD , COCONUT OIL can also be used )
1 cup + 1 to 3 Teaspoons of BOILING HOT WATER .
1 small cup of COLD ICE WATER
*** ALGA SYRUP or MOLASSES is an added treat ! ***
COOKING INSTRUCTIONS
1. Using High Heat fill a pot with water. Bring the water to a rolling boil.
2. Using a bowl- add the Cornmeal - 2 cups , the Flour - 1/4 cup , Salt - 1 Teaspoon , Baking Powder - 1 to 2 Teaspoons, Sugar - 1 to 2 Tablespoons, ( sugar is optional ) , Softened Butter - 1/2 stick .
3. Mix all the ingredients until well blended. Stir until the mix resembles a crumb like texture.
ADDING THE HOT WATER
*** PLEASE USE EXTREME CAUTION WHEN WORKING WITH EXTREMELY HOT WATER . ***
Add - 1 cup of the hot water to the cornmeal mix.
Carefully stir the water into the cornmeal until it is completely absorbed by the cornmeal.
Add 1 teaspoon of hot water @ a time to the cornmeal batter. Continue this step until the thick consistency is reached.
Your Goal is to achieve a thick batter that will not fall apart.
*** IF YOU BATTER IS TO LOOSE OR WATERY ADD MORE CORNMEAL. ***
ICE, ICE , BABY
Add some cold water & Ice Cubes to a small bowl.
SHAPING THE HOT WATER CORNBREAD
Cover your hands completely with the Ice cold water.
Using a Spoon or an Ice Cream Scoop , place the hot water corn bread batter into the palm of your hand.
Shape the cornbread into any shape that you prefer.
** I prefer the round biscuit shape .**
Put your cornbread in the refrigerator for at least 10 minutes. This is a quick way to set the cornbread & hopefully keep it from falling apart in the hot grease.
Time 2 Fry
Using a skillet on Medium High Heat - add your oil . ( 1 - 2 cups as needed & depending upon the size of your skillet .)
Once the skillet is hot - add your cornbread to the skillet carefully.
The HOT WATER CORNBREAD will cook 3 to 4 minutes on each side. When the edges become crispy & browned . It is now time to turn your Hot Water Cornbread.
When the Hot Water Cornbread is done on both sides. Remove the cornbread & drain on some paper towels. Transfer the cornbread to your favorite platter . The hot water cornbread can also be kept warm in a 200 degree oven .
Serve with butter, syrup or molasses for an extra treat.
