Millet pulao recipe in Instantpot || How to cook millets in Insatantpot || Millet Indian recipes

Millet pulao is a healthy and one pot meal. It is very simple to prepare in Instant pot and a great way to include millets in your diet. Usually, we make pulao using rice, but in this recipe, I have replaced rice with little millets. Little millets are also known as saamai (tamil), samulu(telugu), save(kannada), and shavan(hindi). Serve this delicious pulao with raita. Do try this recipe and let me know your feedback.

Ingredients

Little millets - 2 cups
Cinnamon - 2 inch
Cloves - 5
Cardamom - 4
Star - 1
Bay leaf - 1
Onion ( finely chopped ) - ¼ cup
Green chilli - 4
Ginger garlic paste - 1 tsp
Carrot - ¼ cup
Green beans - ¼ cup
Potato - ¼ cup
Green peas - ¼ cup
Turmeric powder - ¼ tsp
Salt to taste
Water - 3.5 cups
Oil - 2 tbsp

Procedure:

1. Wash the little millets for a couple of times. Soak the millets in enough water for more than 3 hours.
2. Finely chop the onions, vegetables( carrot, beans, potato), and keep aside. Slit the green chilies and keep aside.
3. Turn on the Instant Pot on SAUTE mode, once the pot is hot add oil.
4. Add the garam masala and saute until nice aroma comes.
5. Now, add the onions and green chilies and saute until the onions turn transparent.
6. Add ginger garlic paste, vegetables and saute for a minute.
7. Drain off the water from millets. Add millets, turmeric powder, salt and water to the pot. Mix well.
8. Press CANCEL and close the lid. Change the Instant Pot setting to PRESSURE MODE - High pressure and set the time to 5 mins.
9. Once the Instant Pot beeps, quick release after 5 mins.
10. Garnish with coriander leaves and serve hot with raita and fryums.

Note:

Don’t worry if you don’t have an instant pot, you can follow the same recipe in a regular pressure cooker. Cook the millets for 2 whistles and remove the cooker from the flame. Let the pressure release naturally.
Remove the insert from the instant pot after quick release, otherwise, the millets overcook from the hot base.
Can use the same process for any other millets like foxtail, Kodo millet, barnyard & proso millets.
If you don't like the taste of the millets, add rice along with this and cook until you get used to the taste of millets.
Soaking millets make the grains more digestible so you get the nutrients inside.
