Ingredients; pudding
120g /4oz Stoned dates
80g / 3oz Fresh cranberries
170g / 6oz Plain or all purpose flour
170g / 6oz Granulated sugar
60g / 2 oz softened butter
2 large Eggs (room temperature)
200mls Water
1tsp Vanilla extract
1tsp Bicarbonate of soda / Baking soda
½tsp Baking powder
1tsp Mixed spices

Ingredients; Brandy Sauce.
300mls Double or heavy cream
½tsp Vanilla extract
1tbls Brandy or Whiskey
2tsp Icing or powdered sugar

Mixed spice ingredients
Cinnamon, Coriander Seed, Nutmeg, Clove, Pimento, Ginger
